Mid-May Faves


Another week of remote learning/teaching yet things are starting to open up in different regions of this huge state of NY.  Where one of my sister's lives (the Mohawk Valley/central region of NY) things are opening up today.  Here in the capital region, I think it's going to be at least another month if not longer.  Sigh.  But let's focus on positive, uplifting things like blessings from God!

Today we can share FIVE of those blessings....our FAVES...and then link up at the host's site.  Susanne keeps us staying in gratitude mode and for that I'm truly thankful.

Aloo Ghobi

  • INDIAN DISH! I grew up in a very small village in central NY and one of my friends was from the only Indian family in town.  Their mom introduced me not only to a new culture/religion but to some new foods, many of which I loved.  My own parents never cooked Indian food and there wasn't even an Indian restaurant in the Valley.  This is a dish I loved (Aloo Ghobi) and my husband and youngest daughter like it too.  I never had made it but because we've reconnected with my friend and her sister on FB, I contacted them to see if they could send me an easy recipe.  Well, they sent me an authentic one with all the Indian spices and told me exactly how to cook the dish.  It came out great!!  And we had enough left over for lunches this week.  I'm thankful for long time friends and good plant-based food!



  • MOTHER's DAY:  Although we couldn't go out to my fave restaurant this year, the girls made sure I had a nice relaxing day. Dave and I watched the online service together.  Claire made me a really pretty card with a wonderful message inside. Courtney ordered some of my favorite Italian food and went to pick it up.  And then we watched a movie on Netflix that we had wanted to see. I spent most of the day reading, working on my small group study, and just enjoying the quiet day. I'm thankful for my two amazing daughters and their love.

  •  RUNNING WATER!  yes.  A water main break happened late Sunday afternoon across the street from us. Thankfully our home had no damage and our sump pump was working.....but it took the town crew over 10 hours to fix it!  Apparently, according to a neighbor who works for the town, the break was a bad one.  I'm so thankful for running water and when it's shut off for that many hours, you don't realize how much you take it for granted.  It was back on Monday morning so all is well.....but those few hours made us very grateful that we could just hop in the car and go buy large jugs of it to flush the toilet and wash our hands.

  • AFTERNOON HIKE:  One blessing from the pandemic reduced work hours is that if I log in to work by 8 a.m. I am done with my work day at 1 pm.  I love it.  I headed to the town just to the north-east of us where there's an island state park that I've hiked in many times over the last 30 years.  Well today I did a solo hike there (I did see some other people walking and just sitting).  I started on the inner trail and I was the only person on the entire trail!  When I came to the end of it, where it joins the perimeter trail, there was an older couple slowly ambling along.  I passed them at a good fitness walk speed and then slowed my steps to enjoy the river and the scenery.  It was such a pleasant day with plenty of sunshine and temps in the high 50s.  We've had a chilly week but things are warming up again.  I'm thankful for all the state parks and nature preserves in this part of NY.
  • COFFEE HUMOR:  I just cracked up when I saw this online while searching for an image for a project.  My daughters KNOW I can NOT function in the morning with out my first mug of coffee.  Seriously.  and then I tend to have at least 2 more large mugs with and after breakfast (or a travel mug when driving in to classroom).  I also have a mug in the afternoon although if it's past 5 then I just do an herbal tea with no caffeine.  I can't abide decaf due to all the chemicals used...it doesn't agree with my gut....so give me a good strong mug of regular coffee...GOOD coffee and I'm a thankful (and happy) for coffee.
Those were the blessings that made me smile this week.

I’ve been trying to get out walking more often now that I’m home and not at work. It’s been very rainy and cold here though and that has sapped much of my motivation.

Good morning Faith. I did not get my FFF post done yesterday. Super busy week here, but I will be working on that today and will post later. I love that you have such lovely hikes close to your home. Yes, for running water! That is a huge thing that we all take for granted way too much! I am not a coffee drinker, but I do know that my morning energy drink helps me get through the day. I can't have any caffeine after noon, or it really interferes with my sleep at night. Have a good weekend. I will go get busy on grading and then my FFF post.

So glad you had a nice Mother's Day with both girls home! I know what you mean about water--we don't realize what a blessing it is until it's turned off for some reason. It's great we have access to jugs of it. I'm glad it was fixed by the next day. My d-i-l is Indian, and all the rest of the family likes Indian food, but I'm afraid I am not fond of it. But I have found some things I can eat, though. I'm glad you reconnected with your friend and got an authentic recipe that you loved. I can't have caffeine due to heart rhythm problems, and I don't care for hot tea, but I love my decaf coffee.

I'm glad you had a nice Mother's day and have been able to get out for walks still. I need tea in the mornings to get myself going - I've never acquired the taste for coffee.

I laughed at the coffee meme when you posted it on fb. I totally relate. I love my coffee too but drink tea after 2 or 3 in the afternoon or else I just can't get to sleep as easily. I love Indian food and that dish sounds delicious. I looked up a recipe. I've never tried a totally vegetarian one but might give this one a try. Your Mother's day sounds like it was lovely. What movie did you watch? Running water is a blessing! We are blessed indeed to have it in our society. When there is a major water main break like that in our town the city parks a water tank somewhere on the street where people can access potable water. Ya gotta go with your pails and jugs. It's a nice service to have when something like that happens. Looks like another lovely hike for you.

Great coffee meme! lol I've only had Indian food a couple of times and I couldn't tell you what I ate. How fun that you experimented and it was such a success. We take so much for granted, especially water and electricity. Just like with this pandemic, it takes an awakening to appreciate all that we have. Your nature pictures are, as always, just lovely to see.

Yes, Indian food is yummy. And I love that there are so many vegan options.
Water! I'm glad yours is back on. I never take clean running water for granted, having lived in a place where all water was carried into the house and boiled before using.
