WEEKLY MENU PLAN

I'm actually glad to be home from our Thanksgiving vacation.  Our first night away we ate out at Olive Garden for their soup and salad/breadsticks special.  a Our 2nd night away was just  desserts because we had Thanksgiving Dinner at 3 in the afternoon so we only wanted our pie at the hotel and then we made popcorn and watched a movie later that evening.  The third night out we ate at Applebees which we hadn't been to in a long time....since maybe 10 years ago! By Saturday evening we were back at home and I just winged it with things we had in the freezer.   Sunday afternoon I sat down and planned some ideas for the week.  


MONDAY:  Beyond Beef (vegan) Burgers with all the fixings:  lettuce, tomato, onion, avocado, ketchup, pickles;  a steamed veggie dish of asparagus, corn and carrots; squash.

TUESDAY:  Japanese style Ramen Noodle soup with shredded carrots, broccoli, zucchini, ginger, boiled egg, spiced chicken, corn and made with veggie broth

WEDNESDAY:  Meatball stew (vegan "beef") with sweet potatoes, green beans, carrots,  and fruit salad on the side (berries, apples, bananas)

THURSDAY: Fish Tacos and Cucumber Salad

FRIDAY:  Subs that I will pick up from work because we are hosting a Xmas party later that evening with hors d'oeuvres and desserts/drinks.

SATURDAY:  Southwest Chicken Wraps with vegan "chicken" plus blue corn chips and salsa; Christmas cookies for dessert
