Dave and I went grocery shopping together this morning and we actually spent less than $100! It helps that we have a freezer well stocked and just needed some fresh produce and a few other items we don't stock up on. It does help to have a menu plan outline. Last week's plan was totally rearranged....I ended up ordering out one night as he had an unexpected company dinner meeting and last evening we ended up going to our fave local diner. Tonight I made Quicker Chicken and Dumplings and it was delicious. THere's a little bit left....enough for me to bring in my lunchbag to work on Monday. Dave will be traveling Monday-Tuesday next week so things might change up again. But for now: here's the dinner plan!
- SUNDAY: Homemade Mac and Cheese; Steamed Green Beans (meatless meal)
- MONDAY: either order T Swirl Crepes for Claire and I (she's coming for dinner after work and before she heads to the Barre to teach her fitness class) or I'll make Italian Bean Soup and Rolls (Plant-based meal/vegan)
- TUESDAY: Ham Muffinwiches and Tossed Salad (didn't get made last week)
- WEDNESDAY: Roasted Veggies over Brown Rice (Cauliflower, Broccoli, Carrots, Onions, Sweet potatoes, Kale) (plant-based/vegan).
- THURSDAY: Vegan "Salmon" Patties on sandwich buns; Three Bean Salad
- FRIDAY: Pick up veggie subs on way home from work/eat early due to Small Group Bible study at 7 pm.
- SATURDAY: Slow Cooker Meat Sauce with Bison over Linguine and Tossed Salad
The goal is to actually make these meals this week although the days can be flexible!

Oh my you had me at day one....and homemade mac and cheese! I'm coming for dinner! Kudos for you spending less than 100 bucks. That is usually our goal - and it rarely happens. We really should have a list - and follow said list - much more often! Thanks so much for your fun reply/comment on my blog last week. It was like a nice chat with a friend!! I hope you have a great week ahead. It certainly looks like you will be eating well!:)
