Yesterday was Mother's Day and the girls and Dave treated me to brunch at Wheatfields in Saratoga. I had the chicken bruschetta pizza, he had the Smoked Salmon Benedict, Claire had the vegan caprese wrap and Courtney had a veggie wrap. I had a drink called "purple rain" made with blueberries, rum and tonic. Oh my was it good!! Courtney had a strawberry margarita and Dave and Claire stuck with iced tea and water. My sister Joy and her son Luke joined us. It was all so good and yes we had leftovers!
We have a week of after work appointments, Dave and Luke are going out to central MA to see a baseball game on Friday-Saturday and a childhood friend of mine who still lives out in my childhood hometown is coming for the weekend and she'll arrive mid afternoon Friday so I took the afternoon off from work. I also have Wednesday afternoon off for my yearly physical with my primary. So....I planned some super easy meals. Tonight I have to drive my oldest daughter and her friend Nate to the train station so I'l pick them up at Courtney's apartment around 5 pm. Dave gets dinner duty tonight and our vegan girl is coming over as usual after her job and before her evening teaching job.
- MONDAY: RICE AND BEANS with FRUIT SALAD (Dave makes a great rice and beans dish....fully vegan and SO good!) I'll eat when I finally get home tonight.
- TUESDAY: FISH TACOS (made with vegan fish), SALSA, BLUE CORN CHIPS, BERRIES and WALNUTS
- WEDNESDAY: ORANGE CHICKEN and POPPY SEED NOODLES, SALAD, STEAMED BROCCOLI
- THURSDAY: PASTA FAGIOLI (made with bison or beyond beef) with FRENCH FRIED ONION BISCUITS
- FRIDAY: Dave and Luke will eat somewhere in MA and Diane and I will either go out or order take out...I'll leave it up to her.
- SATURDAY: SLOW COOKER SLOPPY JOES (made with vegan Impossible beef) and SALAD

Oh my gosh, I LOVE chicken bruschetta pizza!!! Thanks for the menu. I keep forgetting about fish tacos. I've made those on occasion.
