How is it the last week of October and first of November already? Autumn is just flying by. It's rainy and much cooler here in eastern New York today so I'm sitting here with a large mug of steaming hot orange spice tea and thinking of menu planning for our dinners this week. Friday evening we had a spontaneous date night so I didn't cook! That was a huge blessing. Yesterday our oldest daughter came over for my famous cheesy broccoli Mac and Cheese. We also had leftover Winter Squash salad. Here's what I'm thinking for the rest of the week:
- MONDAY: Turkey (vegan) Cutlets with Turkey Gravy; Garlic Mashed Potatoes; Steamed Green Beans; Fresh local apple slices with cinnamon
- TUESDAY: Vegan "Chick'n" Veggie Pot Pie; Steamed Beets; Tropical Fruit Salad (our youngest daughter is coming to an early dinner as we have our small group tomorrow evening...she will stay and help with the front door as we usually get a lot of trick or treaters in our neighborhood).
- WEDNESDAY: Fish Tacos and Coleslaw; Corn chips and Salsa
- THURSDAY: Broccoli Salad; Chicken/Garlic stuffed Ravioli
- FRIDAY: Beef burger for Dave; Impossible Beef Burger (vegan) for me; Leftover Salad; Baked Beans; Dark and Stormy cocktails
- SATURDAY: Slow Cooker Meat Sauce over Linguine; Tossed Salad; Ice Cream sundaes for dessert with raspberries and hot fudge sauce

Hi Faith. You always do such great menu planning! We have impossible beef on the menu plan this week as well. I think I will be using to fix some red beans and rice tomorrow night. I hope you have a great week. See you again soon!
That sounds really good Deb!! Dave makes an amazing Rice and beans but we eat it without meat cause of all the beans containing the protein. black and northern beans. SO good!!
