We are back from our Plymouth vacation and I have to get back to clean eating! We ate fairly well most of the trip minus the fish and chips evening followed by soft serve ice cream and all the various pasta dishes during the funeral luncheon! Not to mention all the cocktails and wine which really pack on the calories.
So I sat down after breakfast and drew up a weekly menu plan for this 2nd full week of Summer. All of our public schools here in NY are now on summer vacation so the mornings are very quiet in the neighborhood. I love Summer because we have a lot of fresh produce including fresh fruits and berries!
- MONDAY: Grilled BBQ pork chop for hubby; Chickpea Salad; steamed corn on the cob; Garlic Toast (my protein will come from the 2 kinds of beans in the chickpea salad).
- TUESDAY: Zucchini boats; Fully Loaded Tossed Salad
- WEDNESDAY: Tofu Veggie Scramble over Jasmine Rice
- THURSDAY: Independence Day: our youngest daughter has plans with friends all day and our oldest girl has plans with friends in the evening so we will have her for a mid-day meal of grilled beef and beyond meat burgers; vegetarian baked beans; homemade potato salad; salsa, chips and ice cream sundaes with oatmilk ice cream and all the toppings: blueberries, raspberries, walnuts, almonds, fat free cool whip, vegan chocolate chips; hot fudge sauce
- FRIDAY: Thai Pizzas and Spinach Salad
- SATURDAY: FAMILY BBQ at my sister Hope's home. Her husband Donny will do some grilling (I'll have to bring my own vegan meat) and we will all contribute a salad or side dish. I'm bringing Poppyseed Veggie Salad and Chocoholic Brownies. Later that evening, if we are hungry, we will eat leftover Broccoli Mac and Cheese or just have tomato sandwiches. We usually aren't hungry after the family bbq.
What's on your menu for Independence Day?? Will you be hosting a family gathering or will it just be your immediate family? Will you be on a lake or a state park with a lake? Will you be at the ocean? Will you go out to see Fireworks in the evening?

Hi Faith. I'm glad you had a nice time away in Plymouth. I meal plan every week. If not, I'd have no idea what I was doing. I'm such a planner. I love summer for many reasons, especially having access to all the fresh fruits and vegetables. Your Independence Day menu sounds delicious. We will grill hamburgers, and hotdogs, and make homemade chocolate chip ice cream sandwiches for dessert. It'll just be the three of us here at home. We will go watch fireworks later in the evening which is always fun and festive. I hope you have a great holiday!
