LAST WEEK of SUMMER MENU

 


I really need to get back to having a menu plan, mainly because there's a plethora of good harvest veggies and fruits available all over the NYS Capital Region. Today I'm headed to 2 Farm Stands and the grocery store to do my weekly food shopping.  Here's the plan for the week (some of these days might switch with other days but this is at least what I'm serving this week).


  • MONDAY: Grilled Italian Seasoning Chicken and Zucchini Boats; Blackberry, Blueberry, Raspberry Cup



  • THURSDAY: Grilled Blackened Salmon; Fully Loaded Tossed Salad; Garlic Toast; Melon Cup

  • FRIDAY:  Grilled Plant-based "steak" Burgers; Corn on the Cob; Fresh Salsa and Blue Corn Chips; oat milk ice cream for dessert



What late summer veggies are you cooking with this week??

Every meal sounds delicious to me! I meal plan every week - usually not by the day, but I have a list of meals I plan to make each week. Tonight we are having a cauliflower, potato, and chicken sheet pan. Super easy!

To answer your question about homeschooling over on my blog - Yes, my daughter attends youth group at church and has karate class several days a week, so she gets a nice amount of socialization. She also attends an online classical Christian homeschool with live classes and a teacher and classmates so she's able to ask questions and interact. It's wonderful and we love her school.
