It's Valentine's Week and I have some yummy recipes planned for the week.
Menu planning helps me to stay on a spending budget at the grocery store and also helps me to see where we need to add in more fruit or veggies and less animal fats or sugar. But this week, I do have some "treats" to make which do contain sugar.
- MONDAY: Baked Salmon; Squash Risotto; Steamed French Green Beans
- TUESDAY: Vegan Tacos (made with Impossible Beef, romaine lettuce, chopped tomatoes, yellow and green peppers, shredded cheddar cheese, taco seasoning, sweet onions); Pineapple Coleslaw
- WEDNESDAY: Bison Burgers (if Bison is on sale; otherwise it will be plant based burgers); Sweet Potato Fries; Fruity Salad
- THURSDAY: Roasted Veggies Vegan Dinner and French Bread (the link brings you to the recipe but it's mistakenly called Steamed Veggies instead of Roasted.) If my husband hasn't left for Boston by dinner time, I will also make him a piece of Baked Chicken breast marinated with lemon vinaigrette.
- FRIDAY: My oldest daughter and I are doing a Luminary Hike at the state park to the north of us. Because it's 45 min away, we will order veggie pizza on the way home and pick it up before returning to either her apartment or my house to watch a movie she received at Christmas. Dave will be at a convention in boston so I plan on baking my famous Chocolate Heart Shortbread Cookies that morning which will be our dessert.
- SATURDAY: unplanned but most likely leftovers or I might go out with a friend...it depends on the weather!

I'm making Raspberry Lemon Muffins and whipping up some Mocha Brownie Bars
