Since that day is only 2 days before Valentine's day, how about whipping up a special breakfast of pancakes like the ones shown above? (courtesy of bisquick.com). If you are busy in the morning due to getting hubby, children and your self off to work/school, then make the batter the night before and get up 10 min. earlier that day. OR, do like I am gonna do and serve these for a fun dinner with fresh fruit cup, slices of turkey bacon and mocha milk shakes.
You can also meet your hubby for lunch that day (if your children are in school!) or go as a family that evening after work/school to IHOP (International House of Pancakes). Our area has a very good one although we haven't been there in several years. Here is a section from their website about National Pancake Day and how you can help many children's hospitals in your region! Isn't this a great cause?

"IHOP launched its annual National Pancake Day fundraising effort in 2006. In 2007, IHOP joined forces with Children's Miracle Network to give away more than 1.1 million pancakes and raise more than $625,000 for local children's hospitals and other worthy causes. Since beginning its National Pancake Day celebration, IHOP has raised approximately one million dollars to support charities in the communities in which it operates. IHOP hopes to raise at least $750,000 with its one day event in 2008."
AND: if you go into your local IHOP between the hours of 7 a.m. - 10 p.m., you will receive an order of short stack pancakes for FREE! And if you choose that, please make a donation to your local children's hospital.
Around our house, because of our evening schedule on Tuesdays, we will be eating pancakes that evening to "celebrate" this day and I will head over to IHOP after work the next a.m. to leave our monetary donation. It really is such a great cause. My husband and I are so thankful for the wonderful team of pediatric specialists who performed surgery on our 9 year old when she was 10 weeks old....she enjoys great health now and has never needed another surgery besides that one (this will be a later post this month) but we realize there are many children, just in our own region, who have chronic health issues or diseases. Let's be a light to the world and show the Love of Christ next week even if it is just a small monetary donation.....it will really help!

Great cause!
Thanks for the info. That's wonderful about your daughter! God is Good!!
I LOVE pancakes!!
We have an IHOP about 5 miles away. We may try and stop by that day.
Jennifer =-)
We just recently got our own IHOP in the Valley. They do make great pancakes and donating to children's hospitals makes eating pancakes there even better! Thanks for the heads up, Faith.
When my kids were little I used to make shaped pancakes too. My youngest is 24! I am sure he would not mind a heart-shaped pancake.
HI Jennifer and Connie-Marie:
Thanks for stopping by. I can't wait until Pancake Day! At least that's one day I know what to cook for dinner! LOL
I inhereted a heart-shaped pancake mold from my step-Mom... I thought it was a cookie cutter until I saw others in use. I can't wait to use it SOON. :~D
HI E-mom: thanks for stopping by! I don't have a pancake mold but I have used my cookie cutter in the past...it works pretty well. I'll use it Tuesday nite for dinner! Enjoy yours!
