A viewer/reader wanted to know where my weekly menu plan was.....I was just so busy this weekend I didn't bother posting. Well, the reader likes getting some ideas from my menu apparently so here goes!!
SATURDAY: We had baked chicken for Dave, vegan chicken for me and a big tossed salad. Small bowl of oat milk chocolate ice cream with sea salt chocolate hot fudge and fresh raspberries/walnuts for toppings.
SUNDAY: We had Bison Burgers with sliced tomatoes, arugula, pickles, sweet onion and steamed green beans.
MONDAY: Claire came to dinner so I made Vegan Stuffed Shells (with Beyond Beef...a plant-based meat) and steamed fresh broccoli.
TUESDAY: TACO night! Vegan fish tacos with asian salad and refried beans on the side. Salsa and blue corn chips.
WEDNESDAY: Veggie Pizza and Kale Salad with Blueberries, Raspberries and fresh Avocado
THURSDAY: Tofu Scramble over Cous-Cous
FRIDAY: Subs with deli ham (Dave) and low sodium turkey (me) plus 3 bean salad. We have to eat early because we are due at the church for Good Friday Service by 6:30 pm.
SATURDAY: Veggie Mac and Cheese (because it's been on our menu the last month but we haven't made it since January!) Small ice cream cups.
SUNDAY: BRUNCH OUT AFTER CHURCH and Homemade Chocolate pie for later in the day.
