When our oldest daughter Courtney moved out 2 years ago, I kind of missed her texting me from her job asking "what's for dinner"? If she didn't like my answer, she'd order her own food via door dash or grub hub or make plans with friends to meet them out. And then when our youngest daughter moved out last autumn, I missed "having" to make more vegan options and missed the laughter and chit chat around the table. It's just Dave and I most evenings (except Mondays when Claire comes over after her main job and before teaching at the fitness barre) and sometimes I find it exhausting cooking after teaching needy prek children all day. I know once I retire at the end of June, that I will enjoy cooking dinners again. And maybe I'll go back to trying one new recipe every week! For now, here's our plan for the week. Last week we sort of stuck to the plan with a bit of moving one meal to a different day and one evening just going out per my husband's request!
SUNDAY: Grilled Bison Burgers with sliced tomato, pickles, ketchup; salad; baked beans; berries
MONDAY: crispy vegan "chicken" strips with leftover pasta and black bean sauce; steamed French green beans; leftover salad; strawberries/melon
TUESDAY: Quick and Easy Stove Top Stew with vegan "beef" (ground Beyond Beef); Chocolate brownies for a special treat
WEDNESDAY: Fish tacos (Haddock and vegan "fish") with broccoli slaw; blue tortilla chips and salsa
THURSDAY: Grilled Italian Herbed Chicken breasts; French onion biscuits; Steamed Beets; Tossed Salad
FRIDAY: Thai Pizza; Dessert with small group(eat early due to our last small group meeting where I will serve homemade brownies and a fruit bowl)
SATURDAY: Slow cooker vegan meatball soup; garlic toast
And since Sunday is Mother's Day (and my favorite restaurant is closed on Sundays!) we are all getting together in Saratoga, with my younger sister Joy (a single mom) and her son Luke at this other fave restaurant, for dinner after church.

Hi Faith. Mari had an interesting crock pot recipe on her blog last Thursday. She posts a new recipe every Thursday, and her recipes are all very good! I tried "Impossible Beef" in a red beans and rice recipe yesterday and it was excellent! We will be buying "impossible beef" in the future and cutting out more red meat. The recipe at Mari's blog is Taco Potato Casserole and I plan to make it with "impossible Beef." I hope you have a great week! See you again soon!
I use my crockpot a lot. We enjoy so many good things from it and I find it an easy way to cook. I will say that BBQ beef is our favorite go to that we have on a regular basis especially when company is coming.
I just buy a cheap roast (I know that's an oxymoron nowadays but that's why this is good cause you can use less expensive cuts). Salt and pepper it real good. Place in crockpot. Mix together 1 finely chopped onion, 1/4 cup ketchup, 1/4 cup bbq sauce, 1/8 cup vinegar, 1 teaspoon worcestershire sauce, 1/2 tsp smoked paprika and 1 bay leaf. Pour on top of roast. Cook on high for 4-6 hours. Remove roast and let stand for 15 minutes. Meanwhile remove bay leaf and add more bbq sauce, ketchup or a tbsp tomato paste to thicken the sauce up a bit. Cut the roast into really thin slices and return to sauce to reheat. Serve on fresh kaisers or cheese buns. Coleslaw and salad is good with it!
