I haven't done a weekly menu plan since the beginning of the month. My husband was away all last week with a family emergency in his hometown so it was just me cooking for one. He's back and today (Sunday) is a chilly but sunny day so after church I made a big pot of chili with bison meat and a pan of cornbread. We won't need dinner unless we just get some cheese and fruit later.
I need to get back on a grocery shopping budget so here's my outline for the week:
- ORANGE CHICKEN with brown jasmine rice and stir fry zucchini, peppers, carrots, green beans
- GARDEN TUNA SALAD and Garlic Bread Sticks
- ONE PAN STEW (made with Impossible (vegan)meat) and tomato/cucumber salad
- ITALIAN BEAN SOUP and leftover cornbread
- FISH TACOS, salsa and blue corn chips; Dark and Stormy cocktails
- HAM MUFFINWICHES; Tossed Salad
No idea which day I'm serving which meal other than we know Friday will be the fish tacos and cocktails as a cocktail with dinner is a splurge for us and splurges happen on Friday or Saturday evenings.
