MONDAY: Souper Enchiladas with Beans (and maybe ground "beyond beef"); Cucumber Slaw tortilla chips and garden salsa (no dessert)
TUESDAY: Slow Cooker Cheesy Noodle Pizza; Tossed Salad; leftover fresh fruit (pineapple, honeydew, cantaloupe, raspberries, blueberries). (no dessert)
WEDNESDAY: Vegan Meatloaf (made with Impossible Beef); Sweet potatoes; Italian Green Beans (no dessert)
THURSDAY: BBQ pulled pork for Dave; vegan fish for me; baked beans and leftover tossed salad (no dessert)
FRIDAY: Soup and Sandwich day: Grilled tomato and cheddar cheese; Tomato Basil Soup; homemade chocolate pudding (for a dessert treat...our "cheat day")
SATURDAY: Slow Cooker Sesame Orange Chicken over Jasmine Rice; Stir fry Veggies (will probably use fresh broccoli, carrots and sweet onions).
