We are back to healthier eating now that we are home from vacation although at Saturday's family BBQ there were 3 different kinds of cookies so of course I had a few of those! We figured it's because it's a party so if we're not having company or a party, then we won't have any desserts. I do treat myself to soft serve ice cream or oat milk ice cream after a hike.
This week we have a couple busier evenings so on those nights I will keep things simple.
SUNDAY: Fish Sandwiches with plant-based fish and homemade tartar sauce. Leftover potato salad and leftover poppyseed pasta salad; Strawberries and melon.
MONDAY: Thai Pizzas and Summer-ySpinach Salad (minus the chicken)
TUESDAY: Plant-based Burgers; Two Season Squash Medley; Watermelon and blueberries
WEDNESDAY: Birthday celebration for our oldest daughter: Ordering out: Indian Food and a chocolate frosted gold cake from the local bakery.
THURSDAY: Ham Muffinwiches; Berry bowls (blueberries, blackberries, strawberries, raspberries and a sprinkle of unsweetened coconut flakes); leftover tossed salad
FRIDAY: BALLET NIGHT! Youngest daughter is getting out of work early, changing at her apt and heading over to have an early dinner with me so we can get up to Saratoga for the NYCB. I'm serving Slow Cooker Vegan Sloppy Joes (made with ground beyond meat which is not included in the recipe link) and a small pasta salad for her (leftover Squash Medley for Dave and I).
SATURDAY: I am leading a hike this day up in the central region of the Adirondacks. I have 14 people signed up! Dave will probably either order a pizza for when I get home or make Rice and Beans or an omelette.
