As we head into colder weather, I've been looking through my Yummly app list of fave recipes and my own personal recipe cards/cookbooks, etc. to find healthful meals that involve the slow cooker or oven bs the grill. We tend to eat between 6-7:15 pm depending on the day, and having a slow cooker is helpful for this.....I can put in the ingredients after breakfast and go Christmas shopping or hiking or to a friends place without needing to rush back to begin dinner. With the hours being dark now by 5:30 pm, I sometimes walk a lot earlier in the day and enjoy coming back inside to the scent of whatever is in the slow cooker. So this week since I have a hike on Wed plus a day away with a friend on either Thursday or Friday plus some plans with my husband for tomorrow, I thought I'd make more slow cooker meals this week.

- SUNDAY: Leftover Vegan Meatball Soup and Garlic Toast; Watermelon
- TUESDAY: Veggie Frittata with Turkey Bacon; Raspberries/Blackberries
- WEDNESDAY:GINGER CHICKEN and QUINOA STEW; Tomato/Cucumber Salad
- Thursday: Vegan "beef" burgers; Sweet Carrots; Tossed Salad
- FRIDAY: Slow Cooker Meat Sauce with bison; linguine; tossed salad
- SATURDAY: leftovers or 3 Bean Chili with Honey Cornbread and Raw Veggie Platter

Hello Faith. Everything sounds wonderful! I love rice bowls! They are so easy. Your 3 bean chili with cornbread sounds really good. Smitten Kitchen has a wonderful recipe on her blog for slow-cooker chicken chili. I've made it several times and it is delicious! There's just something about starting dinner early in the day and then having to think about it for the rest of the day. Have a great week!
