Random Thoughts


Usually on Tuesdays I try to post a special Scripture that the Lord is showing me. A "treasure" so to speak. Or share a "treat" such as a recipe. Or describe a task I am facing. But...this week I only have some random thoughts to share. Maybe there is a "treasure" mixed in.

This past Sunday, our pastor, Dr. Rex Keener, started a sermon series based on the topic "The Holy Spirit". There will be 8 parts. The series is titled: "PowerAide". Week One is titled "Life Works Better Plugged In" and he was laying the foundation based from Acts 1 and 2. The church is 16 years old. He has been the senior pastor that entire time and said he hasn't ever done, in that time, a whole series on this topic.

My husband and I liked his quote: "The Holy Spirit gives us the power to know and do God's will in a way that represents God well.".
One thing I learned that I never knew before: all 4 Gospels talk about the Holy Spirit coming on Jesus. They all are a bit different with the nativity, the various parables, the Crucifixion, etc. but that one thing (Holy Spirit) they agree on and talk about. I just never paid attention to that about the Gospels before!

I also liked this quote that was on the Parent Connections page that my youngest daughter received from her Sunday School teacher:

"Our children are watching us live, and what we are shouts louder than anything we can say." (Wilfred A. Peterson)


I've been getting bored with making so many "comfort" foods during these last 2 months of winter. So this week, although my grill is standing outside (covered) in about 5 inches of snow that hasn't melted, I decided that I would plan some dinners with more "spring and summer" type items. For instance, tomorrow I am baking a dish called Cornbread Chicken and adding the following Salad plus a dish of cous-cous. This salad is one I make in late summer with fresh, "just picked" apples. But...we still have a couple of apples from the Harry and David "fruit of the month" box so....I am going to use them up in this recipe:

Apple 'n' Carrot Slaw

1 bag of coleslaw mix
(I buy the shredded cabbage, broccoli and carrot blend)
2 apples, finely chopped
1/2 c. light mayo
(or more depending on your taste)
2 Tbl sugar
1 Tbl white vinegar
a dash of pepper
In a large bowl, combine the coleslaw mix and apples.
In separate bowl, combine the rest of the ingredients. Mix well.
Pour over the salad mixture and toss to coat.
Cover and refrigerate until serving or for at least 30 minutes.

Note: you can also make this with a regular head of cabbage, shredded; plus,4 large carrots, shredded.

TIP: in the summer, on a hot day, I serve this salad with French bread and grilled chicken breasts marinated with BBQ sauce. Makes a delish, quick dinner.

My oldest daughter is home now from her Written French and English mid-terms and I am heading out to the grocery store. She says the Global History mid-term was not too bad yesterday. Today's English exam was tougher and French "was easy, Mom". Tomorrow she has Math11 (she is one of just a few sophomores in that class but Math is super easy for her which is why she is a grade ahead in that subject) and then she has her Earth Science mid-term which she says will be super easy since it is a 10th grade level course and she is acing it. Must be nice to be brainy. As for me: I had to actually STUDY to earn high grades!

I appreciate those that have an easy time with Math, that is a blessing. I struggled to be accomplished in Math and grew weary with it. So good job for her!
