Tomorrow is the first day of the new season: SPRING! Here in eastern NY today (Sunday) it feels like winter as it was only 33 degrees when I left for church at 10:45 AM. It's not supposed to warm up until later this week when temps will supposedly hit close to 60! But at least the sun is out today like it was yesterday.
Today I decided to post another menu plan so I can try to stick to a list and not engage in impulsive food purchases. It really does help.
Here's what's on our dinner menu this week. I do stay flexible except for Monday evenings when our vegan daughter pops in after her real job and before her part time one. Last week I swtiched up a couple days.....I just like to have an outline so the food items I need are in the fridge/cupboards.
- SUNDAY: Italian Spiced Chicken, Creamy Garlic Rice, Steamed Broccoli
- MONDAY: Vegan Spicy Meatball Quick Stew and French Fried Biscuits (please note: if you click on the link to the recipe, the original recipe has ground bison listed. We now replace that with the plant-based meatballs by Gardein).
- TUESDAY: Ginger Noodle Soup plus Pumpkin Muffins
- WEDNESDAY: Veggie Mac and Cheese; Sliced Tomatoes
- THURSDAY: Baked Salmon; Tossed Salad; Garlic Bread
- FRIDAY: Crunchy Tuna Wraps; Blue Corn Tortilla Chips/Salsa; Dragonfruit

Oh my goodness!! That all sounds AMAZING!!! YUMMMMMM. I just love food. Tonight I fried some breaded haddock and made veggies (broccoli and cauliflower). Last week I made chicken and meatloaf. Nothing fancy, mind you. I do burn things often. :)
